Too many to list but the first one that came into my head was Flotsam and Jetsam - No Place for Disgrace. Mae Moore's Bohemia is rather amazing too.

And add Rush - Moving Pictures to the list.

Dark Side of the Moon was also a production that was ahead of it's time.. and is still, to this day, difficult to match.

Fear Factory Soul of a New Machine one of the best albums ever. Carcass Discatning the Insalubrious also. Colin Richardson is one of the best!

I think Ashes of the Wake by lamb of god, even though I was never the biggest fan of the band... the fucking production just blow me away I love it.

And whoever said Fear Factory I agree with too.  They always have killer production.  When Archetype came out it ripped my face off for how heavy it was.  Sounded like a strapping album.

I have the Album, but FF's newest CD sounds like shit.  The quality is sketchy at best, and it sounds like each song was recorded in a completely different location, with totally different people behind the controls.

for classic metal: Iron Maiden - Powerslave, absolutely

other faves for production:
Voivod - Nothingface
Gwar - Scumdogs (stupid, yes, but damn it sounds great)
Gamma Ray - Powerplant
Danzig - Lucifuge (the first album is great too)
Rammstein - Sensuhcht, almost any others as well - even if you don't like them, it sounds so massive
